Spicy Paneer Paratha

Hi All...

I am here with recipie of Paneer paratha...Bored of eating chapati/ roti everyday evening...I thought to start preparing Parathas... So just started with Paneer paratha.

Its really good... I like it with tomato ketch up and my god...its too good...
Served to my hubby with tomato garlic chutney I usually prepare at home which he enjoys a lot ...
He hates Tomato ketch up...donno why ???!!! :) Its good...I can save it for me..haha :D

You can also serve it with fresh Curd.Good for health too...


So Here is your recipie ...sorry "Our" Recipie ;)


Paneer Paratha :
Paneer Paratha

Ingredients:

For Roti:

2 cups whole wheat flour (atta)
1/2 teaspoon salt or to taste
1 teaspoon vegetable oil
1 cup water (adjust accordingly)

For stuffing:

Paneer (Grated finely ) : 200gms
Coriander powder          : powder 1/2 tspn
Turmeric                   : a pinch
salt                           : as per our taste
Green chillies                  : 4 ( cut into verey very small pieces)
Chopped coriander         : 1 cup

In case putting in Greenchillies is time consuming, just add some chilli powder.It works.

Miscelleneous :

Oil for frying roti
Flour for dusting roti

Procedure :

Prepare the stuffing material by mixing the ingredients mentioned under Stuffing.


  • Sieve the flour. Add oil to the flour.
  • Add water occasionally to make dough.
  • Knead the dough properly and roll out 10-12 balls.
  • Take a ball and flatten it.Dont flatten it completely, but roll in to 6 to 7 cms radius .                                              ( roti should be thick at this point of time) 

  •         Dust some flour now and proceed with the below procedure.
  •         Put 1 tbsp of paneer stuffing mixture in the center.
  • Draw up the edges towards the center to cover the mixture properly.
  • Again flatten it on a floured board to give the shape of a roti.
  • Put the paratha on a preheated gridlle.
  • Turn after cooking for 1-2 minute. After a minute apply ghee around the edges and turn again.
  • Fry till the brownish spots appear on both sides                                                                                       

               Paneer Paratha is ready and we can serve it with fresh curd n enjoy

Healthy Carrot Laddu

Hi All, I am back to my blog after many months...After this break I want to come back to all of you with a sweet. That is Carrot Laddu. Sorry forgot to metion ;) Healthy Carrot Laddu.

The point to be noted is I dint use sugar or jaggery to make this, but believe me its awesome...!!!
My family has lot of diabetics from my mom ,my father in law to my aunt who is my neighbour at Pune, hence just wanted to give them a nice flavour with out disturbing their health.Here is the recipie...Try it out. Doesnt take much time, so it will be a quick serving sweet.

Ingredients :

3 big carrots ( grated)
*Dates syrup made at home ( take a cup of dates,soak in 1 cup of water for half an hour and then blend to gether adding another half cup of water into a smooth paste)
2 tabl spns Milk powder ( optional)
Few Dry fruits ( cashew/badam/walnut)
1 tabl spn oil/butter.

1.Take a kadai, add oil or butter and allow it to get hot.
2.Now fry the dry fruits and take them aside
3.Add the grated carrot to the kadai and fry them nicely until carrots lightly change their color and their aroma hits our kitchen. ( It may take 10-12 mins with continuous stirring)
4.now add  2 to 3 tbl spns of dates syrup and mix it up nicely with the fried carrot and allow them to blend their flavours and change in to a bit thicker mixture.
5.If you cant wait for it to get thicker, we can add milk powder to make the mixture thicker so that we can mould them into laddus.
6.Finally add the dry fruits and switch of the stove.
7.Let them get a bit cool and then make them into shape of laddus.

I bet they are delicious and yummy :)

Mixed Dal Kichdi

Once when I was busy doing window shopping at reliance fresh, just saw a small packet with all dals mixed together , bought it out of excitement, but later on chased by my hubby to just use it and make something tasty out of it... Have a look of the output below ;)

Of course !!!!! It worked out too good.
 

My version of mixed dal kichdi ...
 
Ingredients :
1/2 bowl long grain Rice
1/3 green moong dal
1/3 yellow Moong Dal
1/3 massor dal

1 Small onion chopped
Paste of 2 green chillies & 1" ginger piece ( Paste is optional.Instead use chilli and ginger cut into small pieces )
1 Tbls Oil
1tsp cumin seeds
1/4 tsp Turmeric
1 1/2 tsp salt
pepper/miriyaalu 3- 4


Tempering:
Oil- 1 tblspn
urad dal
chanadal
jeera
redchilli
kaju
kadipattha/ karivepaaku

 
Method :
1. First fry the dals in a spoon of oil for 3 to 4 mins and turn it off.    
1.Now ,Wash and Soak the rice and Dals seperately. Leave for 10min.
2.In a cooker, heat the one spoon of oil and add cumin seeds
3.Add the chopped onion and chiili and ginger paste. Stir and saute for 1min.
4.Add the rice ,pepper and moong Dal.
5.Add the salt and turmeric
6.Make sure not to put too much water .The water should just covers the rice and Dals.
7.turn on the cooker
8.It jus takes the time normal rice would take.
9. Just check accordingly and tun off the cooker and check, pls add some water if necessary


Once the Rice is done, put a small kadai on stove , add oil and let it heat.
Roast kaju till they are roasted well and take them out.
Now in the same kadai add all the ingredients under tempering.Fry nicely until a wonderful aroma hits ur kitchen.Add this to the cooked kichdi and
My god !!! You cant resist it.


Serve it with  Raita


Variation: I can suggest you a masala powder which can be made in your kitchen and added to the above recipie at step 4 with the other ingredients
If you have time and wanted a nice and different taste,
Dry roast 5 cloves + 2 elaichi + 1 dalchin ( half inch )+ few jeera and grind them to a fine powder. It smells awesomee and tastes fantastic when added to the kichdi.

Masala Tomato Rice

Ingredients :

Basmati Rice/Pulav rice : 1 cup
Tomatoes : 5 to 6
Onion - 1 big ( chopped length wise)
shahi jeera- 1 spn
slitted green chillies: 4
pudina leaves : fist ful
coriander leaves: fistful


My Masala powder

Procedure:

1. soak rice for an hour ( If u have time)
2. Now boil 3 cups of water in a container
3. Once it comes up to a boil,add salt,pudina leaves and jeera
4. Now add rice and cook so that grains are seperate ( cooking in a container ,with stirring in between is preferrable)
5. While the rice is cooking, just switch on another stove
6. place a kadai, add oil- do tadka, then add onion, chopped tomatoes and slitted chilli
7. Let it cook until tomatoes tun smooth adn juicy when pressed with back of a ladle.
8. Now add the Masala powder over here and coriander leaves
9. Add the cooked rice and mix nicely and allow it to get fried properly and evenly

My Masala Powder

After using many masala's - garam masala, goda masala --- that masala and this masala which I bought in big bazaar,
thought of preparing one out of my own thought and keeping it in tact for using when its necessary.

Just see it and use it in case u like. here's the recipie for it.

Ingredients:
cloves  - 1 tspn
pepper  - 3
dalchin - 1/2 inch
elaichi - 4
jeera   - 1 spn


Dry roast all the above ingredients and make fine powder out of it.

This one will be good for masala rice, biryani's ,pulav and fried rice also...try it !!!


Popu/Tadka/Tempering

Tadka/Popu/tempering :

Ingredients:

Oil : 1 tblspn
Chanadal - 1 spoon
urad dal - 1 spoon
mustard seeds - 1 spoon
jeera - 1 spoon
red chilli - 2 to 3 break into slits
kadi pattha/ karivepaaku - fistful
garlic ( crushed ) : 5 /Optional
( Garlic is mandatory for dal, sambar, rasam and any traditional curries)

Heat oil in a small kadai, once its hot enough add all the above ingredients and cook until a nice aroma hits your kitchen, thats it .
Start your recipie  or end end it up by adding tadka !!
anyways it makes a path to heaven :) I promise

Green Chutney

Hi ,
Let me put before you a simple and healthy recipie.
having a spoon of this chutney everyday with breakfast gives you a good start.

Green chutney with plain dosa !!! My healthy breakfast wr is urs ???


Ingredients:


coriander/ kothimeer : fistful
pudina : fistful
kadi pattha/ karivepaku : fistful
green chillies: 2 to 3 ( based on your taste)
Salt : 1 spn



 Just grind all the above ingredients with a pinch of salt according to your taste
and there you are !!!


Serve it with idli or dosa and be healthy and fit !!

Gutthi vankaya/ Bharli Vaangi / stuffed brinjal masala

Gutthi vankaya/ Bharli Vaangi / stuffed brinjal masala :


Ingredients:

•10 small brinjals/eggplants,
•1 cup dry shredded coconut,
•1/2 cup peanut powder or peanuts (roasted),
•1/4 cup sesame seeds,
•1 tbsp each coriander-cumin seeds,
•2 tbsp Maharashtrian goda Masala ,
•1 tsp tamarind pulp,
•1 tbsp jaggery,
•2 tsp chili powder,
•salt to taste,
•1 tsp ginger-garlic paste (optional),
•1 tsp turmeric powder.
•2 tsp oil.

Masala:
cloves : 5-6
black pepper : 6
jeera : 1 tspn
elaichi : 4
dalchin - half inch piece

Roast all the above masala ingredients and grind them together into powder consistency.

Method :

1.Remove stems and give four vertical slits (not fully) to the brinjals from the top. If you want to keep the stems, give the slits from the bottom of the brinajls keeping the stem intact. Keep them in salt water for 10 minutes and rinse. Set aside.

2.Roast coconut, sesame seeds, coriander-cumin seeds together till light brown. Powder this mixture and combine tamarind, jaggery, peanut powder, ginger-garlic paste, salt, chili powder and masala mentioned above

3.Heat oil in a pan. Make standard tempering with mustard and turmeric.

4.Add the eggplants and sauté for half a minute and adda pinch of salt just enough for making the brinjal's soft.

5.Add the masala and mix well. Add 1 cup water. Close the lid and cook until eggplants are soft.

6.Garnish with additional coriander leaves. Serve hot !!!

Pacchi pulusu / Tangy onion chilli soup

Hii,

Yesterday I prepared mulakkai tomato eguru ( drumstick tomato curry ) which doesnt have much gravy.
So wanted to make something like rasam or sambhar.But no time..hubby is hungrryy !!
Then remembered my mom's quick pacchipulusu...ahhaa the thought it self  left my mouth watering.

Lets have the recipie here !!!

Ingredients :

water - 3 cups
green mirchi - 4 to 6 ( cut into slits )
onions -1 big
jeera- 1 spn
tamarind - fistful
salt- acc to taste


1. First boil the water until luke warm
2. Mean while soak the tamarind and take out the pulp
3. Add this pulp to the warm boiled water
4. chop onions into small pieces and add to the above
5. Now put a small kadahi on the stove and heat it
6. add a spoon of oil , fry the green chilli slits with jeera
7. Once fried nicely, add some salt to the chilli slits and jeera and add this to the water in step 3.
8. See is salt is fine or else adjust up to your taste


Enjoyyy the wonderful flavour of pacchi pulusu.

Gulab Jamun !!

Gulaaab Jamooon!!! :

I eat since my childhood and not at all bored even now...
Yummy dish I crave for.


Ingredients :
MTR GulabJamun mix - 250gms
MIlk/ water - just enough to knead the jamun mix into smooth dough.
Oil for deep fry
sugar - 2 cups
water for sugar syrup - 1 cup
2 to 3 crushed cardamoms


1.Mix the jamun mix and water and knead to a smooth dough.
2.Now roll out the dough into small smooth balls ( with out any cracks )
3.Let the size of the ball be a bit small, coz once they are in sugar syrup, they gets almost doubled.
4.Now heat the oil in the kadai.
5.Deep fry the balls till they turn brownish red. ( fry keeping it in sim & dont turn them off at a stage of orange color or so )

6.Mean while, add the sugar and water to a bowl and start boiling it at a medium flame.
7.Stirr it till 5 to 10 mins , dont let it get more thich.Just turn it off when sugar gets dissolved in water nicely.
8.Then turn it off and keep it aside.


Now once the deepfrying is done, put the hot fried jamun balls in the sugar syrup and close the lid.

Just look at it after 5 to 10 mins.

Yummy yummy gulab jamun is ready at ur door steps :)

Moong dal Kichdi

Dal Khichdi :
 
Ingredients :


1/2 bowl long grain Rice
1/4 bowl Moong Dal without Husks
1 Small onion chopped
Paste of 2 green chillies & 1" ginger piece ( Paste is optional.Instead use chilli and ginger cut into small pieces )
1 Tbls Oil
1tsp cumin seeds
1/4 tsp Turmeric
1 1/2 tsp salt


Tempering:

Oil- 1 tblspn
urad dal - 1 spn
chanadal- - 1 spn
 jeera- 1 spn
redchilli - 2 to 3
kaju - 5-6
kadipattha/ karivepaaku - fistful

 
Method :     
1.Wash and Soak the rice and Dals seperately. Leave for 10min.
2.In a broad pan, heat the oil and add cumin seeds.
3.Add the chopped onion and chiili and ginger paste. Stir and saute for 1min.
4.Add the rice and moong Dal.
5.Add the salt and turmeric
6.Make sure not to put too much water .The water should just covers the rice and Dals.
7.Cover the lid and turn the heat downaa no problem
8.Check after 5 min to see if the rice and Dals are cooked and most of the water absorbed.If need be a little water can be sprinkled. 


Once the Rice is done, put a small kadai on stove , add oil and let it heat.
Roast kaju till they are roasted well and take them out.
Now in the same kadai add all the ingredients under tempering.Fry nicely until a wonderful aroma hits ur kitchen.Add this to the cooked kichdi and
My god !!! You cant resist it.


Seve it with  Raita .

Pesarattu/Green moong dal dosa

Hi,

from today let me introduce you few foods good for health,especially for women with problems like thyroid and pcos.

It is better for us to close our eyes and shut our mouth when we see rice.

So I will keep postin g few recipies which helps us to control diet with out high carbs.



Pesarattu :

Ingredients

Green moongdal : 1 glass
rice : fistfull ( uncooked)
( Rice to be used if u r not having pcos )

Soak the green moong dal , rice for 24 hours or alteast 10 hrs .
Now grind them to a mixture adding water if necessary.

Thats it. The batter is ready.

Now heat the tawa, put two spoons of oil, spread allover evenly and allow it to heat.

Now pour the batter using a laddle and make it into circular shape spreading from center.

Once the dosa leaves the edges, take it out of tawa using a flat spoon.

and U r there !!!

Have it with yummy fried chanadal chutney.

Home made Chocolate

Yummy Homemade Chocolate:


We are planning to go to hyderabad,where my sisterin law stays with her family.Their lovely kids will be waiting for us.Henc ethought of preparing this choco for them.


It worked quiet well that we finished the entire chokie before it reached them :D




hahahhh


Ingredients:


Milk Powder : 2 cups
Sugar : 1/1/2 cup
Cocoa powder -1/2 cup
Butter 100 gms
Water 1 cup
Milk maid - 1 cup ( optional)




 Now we will start making our delicacy :) hmmm


Start making sugar syrup using sugar and water .Let it come to string consistency, the string which stands between our fingers.
Then turn it off.


Now add butter to it, until its blended well
Then add cocoapowder and milk podwer.Now blend in milkmaid if its handy ...This makes the chocolate yummmmyyyyy :D


You can add crunchy nuts at this point of time.


Now place this mixture in any greased plate and refrigerate.


Cut it into desirable shapes and enjoyyyy !

Tomato Dal / Tomato Pappu

Andhra Style Tomato Pappu :


Ingredients :
 


Tomatoes : 4 - 5
Green Chillies : 3-4
Turdal/kandhipappu - 2 cups
Onion - 1 -Grated finely
tamarind - lemon sized
Salt : acc to taste
chilli powder: acc to taste


Tadka :


mustard seeds - 1spn
urad dal- 1spn
chana dal- 1spn
jeera- 1spn
kadi pattha/karivepaaku - fist ful
red chilli slits
garlic ( Very Imp) - 5 to 6 pods




Before starting to cook, I suggest to just soak turdal with a pich of haldi and one spoon of oil.It makes the dal soft and allows it to get cooked faster when we start cooking.


Take a cooker.just add the soaked dal,onion,tomatoes,slit green chillies and add.
Now add tamarind.


Dont add salt at this moment as it stops dal from getting soft.Add haldi, chillipowder and close the cooker lid and allow it to get cooked till its consistency is mushy.


Now mash the dal, add salt and keep aside.


Take a small kadai, add 2 spoons of oil and add all the tadka ingredients.
Add this tadka to the dal above and ur home will be touched with the essence of heaven !!!


Now have it with hot steamed rice with vadiyams or papads as side dish.


My god !!! You will be lost :)

Dalchini tea

Hi,

My father in law, one of the most inspiring in my life, I respect and love him a lot...He suffers from diabetis and Even my Mom ( Ofcourse they are brother and sister with diabetis as heriditory )

Hence I started searching for options I can keep their diabetis in control. And this is one of my easiest yet very powerful attempts.

Just add an inch of cinnamon while cooking rice or in our chaii ( tea) daily and see the change by yourself.

Hence this is the recipie of the tea - Diabetic tea yet tastes like heaven

Cinnamon Tea , very good for diabetics
Ingredients :

 Milk - 2 cups
tea powder - 2 spoons
cinnamon- 1inch
 elaichi - 2
ginger ( optional )

Sugar ( for diabetic free people)

Preparation :

Just boil milk, add tea powder, cinnamon, elaichi,grated ginger and let it boil nicely until it reaches a tempting colour.

Add sugar if u like :)

just filter the tea and take in a cup.serve with a slice of wheat bread...and see what an evening u have got !!!

Fruit Cake ( Veg/egg )

Yummy Fruit cake [ veg/non veg] :


I am interested in cakes even though I know they are not sooo healthy !!!
So just thought of just adding some health to my cake ;) carrots and apple,which I feel lazy to go to my fridge and cut and thennnn eat !!!


3- 4 carrots ( grated finely)
1 apple ( cut into small tiny pieces
1/3 tspn orange juice
3 eggs / 1 cup milk + 1/2 tin condensed milk
sugar powder
1 1/2 maida
1 tspn baking powder
11/2 tspn cinnamon powder


1) Sieve the dry ingredients
2) Now mix milk and condensed milk / egg to the above sieved mixture, orange juice
3) Mix the mixture well.add cherries,grated carrot and apple.Now put in a greased baking tray.
4) Bake it for 10 minutes under 200degree Celsius and on 180 degree for another 10 minutes.
5) Insert a toothpick and if nothing sticks to it means cake is done. Let it cool for sometime.
Then turn over and tap from back to remove.


Note : I used Electric cooker. I nicely greased the container with butter and then dusted with maida.
Dusting is important here.Then added the cake batter into it.
The cooker button comes up every five minutes and it is a bit work consuming to get it down every ten minutes.But the final cake makes you forget ur hardwork...trust me !!!

Podi Pappu / Pappu fry / Dry dal fry

Hi ,
This is my husband's favourite recipie,it needs less time but more consciousness.Tasty and fast curry to prepare.I learnt it from my mother in law, as she always does it for her son and now its my turn ;) to do it for her son. isnt it ? ;)


Welcome to the Recipie preparation :

Dry Dal Fry
  Ingredients :


Toordal/kandhipappu : 1cup
onion :1 small
green mirchi :3
salt: acc to taste
turmeric: 1 spoon
mirchipowder : acc to taste
Oil : 1 spoon










Ingrdients for tadka/popu :


minappappu / urad dal : 1 spoon
chandal/ pachi senagapappu : 1 spoon
aavalu / mustard seeds : 1 spoon
jeera/ jeelakarra : 1 spn
red mirchi : 2 #s


Now lets start the preparation :


First , soak the toordal with 1 cup of water, pinch of turmeric and two drops of oil, just for few mins b4 cooking.


Now pressure cook the dal with water in a cooker and stop it when it is stiff enough as in the pic ( not mushy ).
Take care that it shud not be too mushy or too stiff. Now once it is cooked enough, turn off and drain the excess water if any and let the dal kept ready for preparation.


1. Take a kadai, heat nicely
2.put a tspn of oil, let it heat
3. put all the tadka ingredients,let them splutter
4.Add finely chopped onions, green mirchi,allow them to fry nicely
 5.Now add the dal which is kept aside in the beginning and keep stirring
5.Add salt,turmeric,chillipowder and keep stirring.
6.Note : stir with skillet closed if they are a bit stiff and stirr only open if they are abt to be mushy.


Thats it here you are !!! Garnish with coriander and server hot with steamed rice...


Variations : You can add dry coconut powder and stirr, cook at the end keeping lid closed for 5 mins.
