Spicy Tomato Dosa

Hello ... am back after many days with a spicy spicy dosa in this rainy season...Few days back went out for dinner to a near by restaurant where I have ordered tomato dosa just to try a different taste and my god... its awwweesome.

So tried to do the same at home and it came out well...check out the recipie.

Ingredients :

1. Dosa batter ( 4 cups)
2.  Tomatoes - 3
3. Coriander/ Kothimeer (fist ful ) - for additional taste /option
4. Green chilly - 2
5. Salt - as per taste
Tomato Dosa with chicken fry...


Process to prepare :

  • Keep the dosa batter ready.
  • Grind together tomatoes, green chillies,coriander and salt together in to a fine paste.
  • Now mix this grinded paste with your dosa batter nicely.

Procedure :

  • Heat Dosa tava or non-stick flat pan over medium-high flame. Sprinkle few drops of water to check whether the pan is sufficiently hot or not. When the water drops starts cracking, rub the pan with a cloth.
  • Now spread 1 table-spoon oil on the pan. Take 1/2 cup of dosa batter and spread it properly in circular motion to form a medium thick dosa on a hot pan.
  • After 2 minutes, add 1 table-spoon oil more on the dosa crust and flip to other side. Cook dosa from both sides.
  • You can serve it with coconut chutney to enhance its taste more.

    Spicy Paneer Paratha

    Hi All...

    I am here with recipie of Paneer paratha...Bored of eating chapati/ roti everyday evening...I thought to start preparing Parathas... So just started with Paneer paratha.

    Its really good... I like it with tomato ketch up and my god...its too good...
    Served to my hubby with tomato garlic chutney I usually prepare at home which he enjoys a lot ...
    He hates Tomato ketch up...donno why ???!!! :) Its good...I can save it for me..haha :D

    You can also serve it with fresh Curd.Good for health too...


    So Here is your recipie ...sorry "Our" Recipie ;)


    Paneer Paratha :
    Paneer Paratha

    Ingredients:

    For Roti:

    2 cups whole wheat flour (atta)
    1/2 teaspoon salt or to taste
    1 teaspoon vegetable oil
    1 cup water (adjust accordingly)

    For stuffing:

    Paneer (Grated finely ) : 200gms
    Coriander powder          : powder 1/2 tspn
    Turmeric                   : a pinch
    salt                           : as per our taste
    Green chillies                  : 4 ( cut into verey very small pieces)
    Chopped coriander         : 1 cup

    In case putting in Greenchillies is time consuming, just add some chilli powder.It works.

    Miscelleneous :

    Oil for frying roti
    Flour for dusting roti

    Procedure :

    Prepare the stuffing material by mixing the ingredients mentioned under Stuffing.


    • Sieve the flour. Add oil to the flour.
    • Add water occasionally to make dough.
    • Knead the dough properly and roll out 10-12 balls.
    • Take a ball and flatten it.Dont flatten it completely, but roll in to 6 to 7 cms radius .                                              ( roti should be thick at this point of time) 

    •         Dust some flour now and proceed with the below procedure.
    •         Put 1 tbsp of paneer stuffing mixture in the center.
    • Draw up the edges towards the center to cover the mixture properly.
    • Again flatten it on a floured board to give the shape of a roti.
    • Put the paratha on a preheated gridlle.
    • Turn after cooking for 1-2 minute. After a minute apply ghee around the edges and turn again.
    • Fry till the brownish spots appear on both sides                                                                                       

                   Paneer Paratha is ready and we can serve it with fresh curd n enjoy

    Healthy Carrot Laddu

    Hi All, I am back to my blog after many months...After this break I want to come back to all of you with a sweet. That is Carrot Laddu. Sorry forgot to metion ;) Healthy Carrot Laddu.

    The point to be noted is I dint use sugar or jaggery to make this, but believe me its awesome...!!!
    My family has lot of diabetics from my mom ,my father in law to my aunt who is my neighbour at Pune, hence just wanted to give them a nice flavour with out disturbing their health.Here is the recipie...Try it out. Doesnt take much time, so it will be a quick serving sweet.

    Ingredients :

    3 big carrots ( grated)
    *Dates syrup made at home ( take a cup of dates,soak in 1 cup of water for half an hour and then blend to gether adding another half cup of water into a smooth paste)
    2 tabl spns Milk powder ( optional)
    Few Dry fruits ( cashew/badam/walnut)
    1 tabl spn oil/butter.

    1.Take a kadai, add oil or butter and allow it to get hot.
    2.Now fry the dry fruits and take them aside
    3.Add the grated carrot to the kadai and fry them nicely until carrots lightly change their color and their aroma hits our kitchen. ( It may take 10-12 mins with continuous stirring)
    4.now add  2 to 3 tbl spns of dates syrup and mix it up nicely with the fried carrot and allow them to blend their flavours and change in to a bit thicker mixture.
    5.If you cant wait for it to get thicker, we can add milk powder to make the mixture thicker so that we can mould them into laddus.
    6.Finally add the dry fruits and switch of the stove.
    7.Let them get a bit cool and then make them into shape of laddus.

    I bet they are delicious and yummy :)

    Mixed Dal Kichdi

    Once when I was busy doing window shopping at reliance fresh, just saw a small packet with all dals mixed together , bought it out of excitement, but later on chased by my hubby to just use it and make something tasty out of it... Have a look of the output below ;)

    Of course !!!!! It worked out too good.
     

    My version of mixed dal kichdi ...
     
    Ingredients :
    1/2 bowl long grain Rice
    1/3 green moong dal
    1/3 yellow Moong Dal
    1/3 massor dal

    1 Small onion chopped
    Paste of 2 green chillies & 1" ginger piece ( Paste is optional.Instead use chilli and ginger cut into small pieces )
    1 Tbls Oil
    1tsp cumin seeds
    1/4 tsp Turmeric
    1 1/2 tsp salt
    pepper/miriyaalu 3- 4


    Tempering:
    Oil- 1 tblspn
    urad dal
    chanadal
    jeera
    redchilli
    kaju
    kadipattha/ karivepaaku

     
    Method :
    1. First fry the dals in a spoon of oil for 3 to 4 mins and turn it off.    
    1.Now ,Wash and Soak the rice and Dals seperately. Leave for 10min.
    2.In a cooker, heat the one spoon of oil and add cumin seeds
    3.Add the chopped onion and chiili and ginger paste. Stir and saute for 1min.
    4.Add the rice ,pepper and moong Dal.
    5.Add the salt and turmeric
    6.Make sure not to put too much water .The water should just covers the rice and Dals.
    7.turn on the cooker
    8.It jus takes the time normal rice would take.
    9. Just check accordingly and tun off the cooker and check, pls add some water if necessary


    Once the Rice is done, put a small kadai on stove , add oil and let it heat.
    Roast kaju till they are roasted well and take them out.
    Now in the same kadai add all the ingredients under tempering.Fry nicely until a wonderful aroma hits ur kitchen.Add this to the cooked kichdi and
    My god !!! You cant resist it.


    Serve it with  Raita


    Variation: I can suggest you a masala powder which can be made in your kitchen and added to the above recipie at step 4 with the other ingredients
    If you have time and wanted a nice and different taste,
    Dry roast 5 cloves + 2 elaichi + 1 dalchin ( half inch )+ few jeera and grind them to a fine powder. It smells awesomee and tastes fantastic when added to the kichdi.

    Masala Tomato Rice

    Ingredients :

    Basmati Rice/Pulav rice : 1 cup
    Tomatoes : 5 to 6
    Onion - 1 big ( chopped length wise)
    shahi jeera- 1 spn
    slitted green chillies: 4
    pudina leaves : fist ful
    coriander leaves: fistful


    My Masala powder

    Procedure:

    1. soak rice for an hour ( If u have time)
    2. Now boil 3 cups of water in a container
    3. Once it comes up to a boil,add salt,pudina leaves and jeera
    4. Now add rice and cook so that grains are seperate ( cooking in a container ,with stirring in between is preferrable)
    5. While the rice is cooking, just switch on another stove
    6. place a kadai, add oil- do tadka, then add onion, chopped tomatoes and slitted chilli
    7. Let it cook until tomatoes tun smooth adn juicy when pressed with back of a ladle.
    8. Now add the Masala powder over here and coriander leaves
    9. Add the cooked rice and mix nicely and allow it to get fried properly and evenly

    My Masala Powder

    After using many masala's - garam masala, goda masala --- that masala and this masala which I bought in big bazaar,
    thought of preparing one out of my own thought and keeping it in tact for using when its necessary.

    Just see it and use it in case u like. here's the recipie for it.

    Ingredients:
    cloves  - 1 tspn
    pepper  - 3
    dalchin - 1/2 inch
    elaichi - 4
    jeera   - 1 spn


    Dry roast all the above ingredients and make fine powder out of it.

    This one will be good for masala rice, biryani's ,pulav and fried rice also...try it !!!


    Popu/Tadka/Tempering

    Tadka/Popu/tempering :

    Ingredients:

    Oil : 1 tblspn
    Chanadal - 1 spoon
    urad dal - 1 spoon
    mustard seeds - 1 spoon
    jeera - 1 spoon
    red chilli - 2 to 3 break into slits
    kadi pattha/ karivepaaku - fistful
    garlic ( crushed ) : 5 /Optional
    ( Garlic is mandatory for dal, sambar, rasam and any traditional curries)

    Heat oil in a small kadai, once its hot enough add all the above ingredients and cook until a nice aroma hits your kitchen, thats it .
    Start your recipie  or end end it up by adding tadka !!
